Among the woods and pastures of Monte Amiata you'll find Corsini, the historic bakery that has dominated Maremma Toscana since 1921. The history of the Corsini family is one of bread and biscotti. It has its beginnings in the oven of Corrado and Solidea, who set in motion a long tradition that has passed down from one generation to the next right through to today. Indeed, even if the company has allowed itself to evolve over time, growing into a modern facility with a number of employees, it has managed to maintain its artisanal roots and, most importantly, emphasis on care when it comes to ingredients and quality. Among its many specialities, its cantuccini deserve a special place (available in many varieties, including 'classic'). Their truly alluring selection of ancient Tuscan recipes includes Polendina made with chestnut flour, Amiata focaccia and Pandesanti. And, of course, biscotti and sweets abound: soft amaretti cookies, cavallucci, ricciarelli, panforte, melba toast, sweets, tarts and tart slices and cakes. They also produce seasonal specialities like nougat, panettone and colombe Easter cakes.
