Umberto Bombana's restaurant does not betray the level of the flagship one, in terms of either location (450 square metres on the sixth floor of an historic building with views over the Yellow River and the Oriental Pearl Tower) or food, which is among the finest in Asia. Italian in style, flavour and feeling, Bombana's gourmet cuisine is of an exceptionally high level and is accompanied by a deep list of Italian and international wines, designed by Gian Luca Fusetto, and an equally important selection by the glass. Among the classics of chef Riccardo, the homemade tagliolini, butte, parmigiano, and white truffle, the pappardelle with lamb ragout, rosemary and lamb jus, or the butter steamed Normandy blue lobster tail (perfect texture).
