Many of the classes offered at Gambero Rosso are taught by the most important names in Italian and European cuisine and oenology. The courses have different durations and methods, appealing to a wide range of participants from young amateurs who want to learn the art of cooking to professionals who wish to enhance their cooking and culinary knowledge by learning new concepts. The courses are also intended for any food and wine enthusiast who is interested in Italian culinary heritage.
Professional Cooking Classes
The professional level cooking courses follow a demanding, time-tested program in which participants learn the necessary skills to tackle the food sector as professionals. The restaurant world does not permit improvisation so the courses are carefully studied and designed down to the last details, calling for commitment and dedication from students. The goal for participants is to experience the ever-changing culinary world. Each class offers the opportunity to grow, improve, and find a vocation by pursuing one’s interests under the guidance of individuals who have been successful in the culinary field. Each of the courses is accompanied by educational materials prepared by the instructors. Participants will have the opportunity to draw upon multiple tools to advance and deepen their knowledge of the topics covered in the classes.
Amateur Cooking Classes
The amateur cooking classes consist of a series of lectures which are open to both beginners and seasoned cooks. The classes offer instruction on cooking, decorating, and serving techniques. They are held in the evening, from 19.00 to 22.00, and provide each participant with a fully equipped workstation, an apron supplied by the Città Del Gusto, and handouts with recipes. Each student, after assisting the chef with the preparation of various dishes, recreates them under the supervision of the instructors.
Wine Tasting Classes
Gambero Rosso consults experts and leading authorities in the field of oenology in developing its wine tasting classes. The history of Gambero Rosso goes hand-in-hand with the history of Italian wine so the knowledge of the terroir, the producers, and the work carried out in wineries and on farms allows our teachers to passionately and professionally teach students everything there is to know about wine. All of the courses are accompanied by educational materials prepared by our teachers. Participants will have the opportunity to draw upon multiple tools to advance and deepen their knowledge of the topics covered in the classes.
Management
Master in Food and Wine Communication and Journalism
The Master was developed by the Faculty of Education, the Journalism School of the University of the “Suor Orsola Benincasa” studies and Gambero Rosso.
The Master in Food and Wine Communication and Journalism represents a unique opportunity to deepen your knowledge about the world of food and wine communication and specialize in a sector with new markets. The course prepares students to be expert communicators regarding food and wine tourism, promoters of “Made in Italy” foods, connaisseurs of terroir and local cuisine, and proficient in public relations and marketing. Students will learn to edit multimedia content and also organize food and wine events. Students study the historic and anthropological context of Italian and international cuisine with an emphasis on the cultural, social, and economic aspects of food. Students also learn tasting techniques and sensory analyses in order to understand and recognize the quality of food. The teaching methods of the Master integrate theory with practical knowledge and instruction provides chronicles of business case history, guided tours of companies, wine tasting classes, practical exercises in creative writing, writing reviews and press releases, as well as the production of multimedia documents.
