Producer

 

The company was created by Rolando Grassi, and today it is run devotedly by his son Giacomo, who specialized with great success in the production of high quality extravergine olive oil. After having studied agriculture at university, he began to experiment with new methods of both cultivation and extraction. He is an important influence in a still very traditional Tuscany. He was among the first to bottle monocultivar oils.

 

Olive Oil

 

This extravergine is impressive for its faithfulness to the territory which it elegantly and powerfully expresses. It is also one of the best representatives of the frantoio variety in the production year 2011/2012. On the nose it is direct, balsamic and extremely green, with notes of cypress and aromatic herbs. Elegant and vertical in the mouth, it displays opulent bitterness and a green pepper pungency.

 

Pairings: Bean soups, legumes, steak
