Michele Bellotti is a tough guy despite his carefree, thoughtless demeanor. And this is demonstrated by the successes of his openings that rest on a solid and traditional cuisine, enlivened by refined products, also locally sourced, and creative flair. Among the great classics, the beef tartare with quail egg and parmigiano, the vitello tonnato, and above all the casoncelli, a typical stuffed pasta from Bergamo, the chef’s homeland, stuffed with meat, ham, pork shoulder and bacon, served with classic butter and sage. The pastas are the strong point, but the braised main is equally a good choice… Clients drink well and drink Italian.
