The menu (5 courses at €80, 10 at €120 and 15 at €180) is seasonal: Nori seaweed ravioli and shrimp with grilled fresh cheese are the opening amuse bouche. And then impeccable technique and passion in the carrot, coconut and chive oil; artichoke, egg and orange; peas, anchovies and ham broth; pasta, rancid fat garlic and chili pepper; pasta timbale (amazing both to look at and on the palate) made with duck, truffle and red fruits. The delightful dessert (provocatorily called “fucking cold egg”), the small petit fours, very rich and presented on a wooden trolley, beat it hands down. Wine list of good quality and skilled service.
