The way the kitchen, led by his wife Annie Féolde, has over time become the destination of gourmets from all over the world is newsworthy. You will be immediately greeted by an enveloping service, present at all times, yet able to leave you in perfect intimacy. Like any self-respecting ritual, here too there are indispensable codes. The first is the visit of the jewel-vault that gives meaning to the name Enoteca, to be concluded with a glass of bubbles. Then, sit at one of the “dressed” tables with the best dishes, there is a reading of the menu accompanied by the monumental bottle list. The two tasting menus, Scoperta (7 dishes, 275 euro) and Contemporaneo (9 courses, 285 euro) are made by shaping fine ingredients, original inventiveness and contemporary techniques. Some suggestions: lobster in salmì with endive soaked in milk with croquettes of lobster claws and bergamot; charcoal duck breast, purple sauerkraut and spicy garlic cream; saddle of venison au gratin with dried porcini mushrooms, toasted walnuts and laurel extract, and the phenomenal squab in cocoa-bean and salt crust, mango chutney, paprika carrots and spicy “diavola” sauce whose service with the guéridon by the very elegant waiters is a feast for the eyes and a lesson in style that is hard to forget.
