Description

Antonio Mermolia is doing great in the restaurant owned by Marche native chef Fabio Trabocchi, keeping up the standards of quality and creativity. We already appreciated the work of Antonio in Miami where he pushed Le Sirenuse restaurant to new highs. Fiola Washington opened in 2011 in the Penn Quarter, an elegant venue that showcases ingredients of the highest level, be it extra virgin olive oil, cheese, the finesse of stuffed pasta, or meats. The context is full-on fine dining: an elegant and refined atmosphere where the overall quality is very high. The first appetizers are seriously good. Among the signature dishes, we point out the scampo alla romana, the acquerello risotto with cacio cheese and lemon or the perfectly cooked Colorado lamb. Save room for dessert, Italian pastry chef Claudia Barrovecchio is a true talent, her interpretation of tiramisù is simply brilliant. The wine pairings are brilliants thanks to the hard work of the sommelier Said Al-Banna who manages a very extensive wine list with remarkable recharges.
