Giorgio Locatelli has the great merit of having built a well oiled, solid machine that relies on a team of professionals capable of giving consistency to the experience. Starting from a very deep cellar of only Italian labels, very classic in choices (perhaps they could dare a little more by pushing niche styles and producers), complete with maps and info to help the consumer in the choice. The cuisine is very much traditional and it always boasts valuable technical level, be it the gnocchi with black truffle or morels, or a perfectly cooked roast rabbit leg, with polenta, ham and radicchio correctly contrasting sauces. Perfect cooking times make the difference here, it's a matter of texture, it's a matter of taste. The service is very professional, full of attention. Attention to detail is key, the dining room with well-spaced tables puts guests at ease.
